Lasagna Rollups
8 Lasagna noodles
1/2 cup onion, chopped
1 clove garlic, crushed
1-1/3 cup (2-6 oz. cans) tomato paste
1-2/3 cup water
1 teaspoon oregano leaves
1-10 oz. package (2/3 cup) cooked,
thoroughly drained frozen chopped
spinach
1 pint ricotta cheese
1 cup grated parmesan cheese
1 1/2 cup (6 oz.) shredded mozzarella
cheese, divided
1 egg, slightly beaten
1/2 teaspoon salt, 1/4 teaspoon pepper
Cook and drain lasagna noodles.
Cut noodles in half cross-wise.
Brown onion and garlic in saucepan.
Add tomato paste, water, oregano, and
basil. Cover; boil gently 20
minutes. Combine spinach, ricotta
cheese, parmesan cheese, and 1 cup of
mozzarella cheese, egg, salt and pepper
in medium bowl. Spread spinach
mixture on each noodle. Roll up.
Place seam side down in 13" baking dish.
Pour sauce over rolls. Top with
remaining 1/2 cup mozzarella cheese.
Bake in preheated 350 degree oven for
30-40 minutes. The lasagna
roll-ups may be prepared ahead, covered
and refrigerated overnight. To
bake, cover and place in preheated 350
degree oven for 30 minutes. Remove
cover and continue baking about 30
minutes longer or until heated through.
