Pizzelles

 

6 large eggs

3 1/2 cups flour

3/4 cup sugar

1/2 cup butter

2 teaspoons baking powder

1 tablespoon vanilla

 

Add 6 eggs into a bowl and mix well.  While mixing slowly add sugar.  Melt the butter but make sure it is no longer warm.  Slowly add while still mixing.  After the eggs, sugar, and butter are mixed add the rest of the ingredients, mixing well.  The cook claims only the first three ingredients need mixed in a particular order.  Place a spoon of the dough onto your pizzelle iron and cook to your taste.

 

Important note:  The pizzelle iron is a very important part of the recipe.  It should be a heavy one, preferably able to make two at a time.  If it is not heavy enough to squeeze the dough thin the pizzelles will be thick and not cook properly.
